Inês Rodrigues makes Portuguese conservas — sardines, mackerel, and salted cod preparations — from recipes her grandmother used in Alentejo. She supplies North Ward families and a handful of Newark restaurants. Her smoked sardine pâté is not available at any store. You have to know someone who knows Inês.
